    Cantemerle


     
    Located in Haut-Medoc, Cantemerle has been planting grapes and making wines since 1354, and was classified in the original Bordeaux Wine Official Classification of 1855, making it one of the only five Chateaux from Haut-Medoc that is on the list.
     
    Its vineyard situated on the deep gravel of the Macau and Ludon communes, the resulted wines are complex, balanced, refined, and truly reflecting its exceptional terrior.
     
    TWines from Cantemerle are produced from an average of 35 years old vines, and is notable for its elegance style. Since 2001, the chateau has shifted its attention to envirnment, and has been practicing “green” techniques to achieve optimum quality of the grapes.
     
     
    In this episode of «Confidences by Watson's Wine #2», chef Samuel LEE and head sommelier Maxime VERDIER at Shangri-La Paris has paired braised codfish, ginger and spring onions with the red from Cantemerle.
