Wild-fermented in French oak (35% new) with 100% solids, matured for 15 months. Some colour development, not an issue; this is a complete wine, with fruit to the fore, oak and acidity of lesser importance; the mouthfeel is admirable, as is the expression of place and variety, white peach, green apple and citrus expertly hand-stitched together. Bindi Quartz Chardonnay 2016
With only 150 cases produced from minuscule yields of less than one ton per acre, Bindi's 2016 Quartz Chardonnay will be hard to track down, but it's a standard-bearer among Australian Chardonnays. The vines are almost 30 years old, with the fruit all barrel fermented and aged one year in one-third new French oak. The result is a wine characterized on the nose by hints of pencil shavings and toasted nuts and loaded with pear, melon and citrus on the full-bodied palate. It's rich and mouthfilling without coming across as heavy, finishing with tremendous length and zest. RP

Very fresh and intense aromas of lemons, peaches, hazelnuts and white florals are delivered with striking definition and purity here. The palate is impressively layered, long and powerful with a pithy core of lemon and yellow-grapefruit flavors, as well as peach, honey and hazelnut. I always want to say this is quartz-like, but probably more so its precision, and it’s almost the colour of a pale citrine. It’s all class with the perfect blend of fruit flavour and weight to winemaking inputs; nothing dominates. It’s all restraint yet has a latent power. Such purity of fruit, freshness and mouthwatering fruits in the form of grapefruit, lemons and white peaches. Dry, flinty and stony aromas with grilled nuts, too. The palate has an impeccably seamless and powerful style, impressive depth and a long acid-drenched finish. This is impressive. JS
Bindi Quartz Chardonnay 2018
Powerful, intense aromas of melon, white stone fruit, lemon pith and musky, spicy minerals. These all flow through on to the palate, which is rich yet very refined, with lovely, almost crunchy acidity, very fine yet persistent tannins, a lovely flow across the palate. Mineral driven, yet with plenty of fruit, you get the impression this wine is still reserved compared to its underlying potential. Great depth and length, with building complexity. Should evolve superbly.
