About The Wine
Full, deep crimson-purple; this is a shiraz with some of the accoutrements of cabernet sauvignon, but without any loss of its core identity; black fruits have great depth and tannin structure, the depth not greater than the length. Power with balance, and an unqualifiedly long future. JH
A good marriage of food and wine ideally provides more pleasure than enjoying either one separately. As each of us have different sensitivities to various flavours and preferences, the definition of 'perfect pairing' varies, and this makes up the fun part of food and wine pairing.
Hand picked, mechanically sorted. Fermented with ambient yeast, 25% whole bunches. 16 days maceration. Matured for 9 months in 32% new French oak. The 25% whole bunches bring a briary complexity, while building a tannic bridge between the attack and mid palate. The tannins, grape and oak, serve as a long arc across blue/boysenberry, anise, clove and violet. Peppery and vibrant as much as it is plush and firm. JS
