This is 100% chardonnay, whole-bunch pressed and sent to old oak for fermentation. Left for one year before secondary fermentation in the bottle and five years' bottle ageing on lees before disgorgement. A bright yellow–green. A complex bouquet with yellow fruits, acacia honey and just-out-of-the-oven baked goods. Very even on the long, chalky palate. JH
