Hand-picked, 90% destemmed into small open fermenters, 10% whole bunches, the 7-10 day ferment finished in French barriques and puncheons (30% new), matured for 9 months. This is serious pinot noir, with satsuma plum and sour cherry flavours on the long, textured and very classy palate. JH
