The 2021 Ambervale Cabernet Sauvignon is inky and full-bodied, with lashings of cassis and dark chocolate, layers of chargrilled meat, bramble, exotic spice and tobacco. This is a big, dark, brooding Cabernet here, with all the rocky, quasi-mineral trappings of the ancient Eden Valley soil. Good wine. Oak is present, but it's a well-considered match to the vineyard.
